Margaret Walker, Larbert, Stirlingshire Don’t Worry Yes – while you may see either term in recipes, they are both the same coarsely-textured, spiced, smoked pork sausage. However, you can buy chorizo in several different forms. Our favourite is the soft cooking chorizo sausage – this tends to be the size of regular sausages. Roast, grill or pan-fry. Drier cured chorizo is sold sliced (like salami) or as a big chunky sausage, to be sliced as thickly or as thinly as you like.
