I have a super-demanding job, which means I am always eating on the run. I’m not a fan of junk food, so I like to make sure I have a loaf of artisanal bread and a supply of fresh produce for breakfast, lunch and anything in-between. All I need is my Smeg toaster. The recipe on the right is for one of my favourite lunch options – especially enjoyable on a Friday afternoon as I contemplate the weekend ahead! SAM’S AVO TOAST WITH A KICK INGREDIENTS • 2 slices artisanal wholewheat bread • 2 tablespoons cream cheese • 1 ripe avocado • lemon juice to taste •1 spring onion, finely sliced, or 1 small mild red chilli, finely chopped • Maldon salt and freshly ground black pepper to taste METHOD 1.
