Springtime Risotto
The secret to a perfectly creamy risotto without dairy? Don’t rinse your rice! Arborio rice is known for its high starch content, which seeps into the broth to create risotto’s signature silky, unctuous texture. But vegan butter certainly helps, too.
SERVES 4
2 cups baby spinach¼ cup olive oil¾ cup dry white wine4 cups vegan chicken broth2 tablespoons vegan butter2 tablespoons olive oil½ medium white onion, finely chopped1 zucchini, diced small3 cloves garlic, finely chopped1½ cups arborio rice, unrinsed½ teaspoon salt½ teaspoon black pepperZest of ½ lemon and 2 teaspoons lemon juice, plus a wedge for garnish¾ cup shredded vegan parmesan, divided2 tablespoons toasted pine nuts
