Bacon, Egg & Cheese Maple “McGriddles”
Our veganized rendition of the McGriddle uses smoky-crispy carrot bacon, maple-infused vegan buttermilk pancakes, and homemade folded egg patties to improve upon the cult-favorite breakfast sandwich.
SERVES 4
For the carrot bacon:
2 large carrots, peeled and ends trimmed2 tablespoons vegetable oil, plus more for frying3 tablespoons soy sauce1 teaspoon liquid smoke½ tablespoon maple syrup1 teaspoon sriracha2 tablespoons nutritional yeast1 teaspoon umami mushroom seasoning1 teaspoon garlic powder1 teaspoon smoked paprika
For the buttermilk maple pancakes:
½ cup maple syrup1¼ cups vegan milk1 tablespoon apple cider vinegar1½ cups all-purpose flour1 tablespoon baking powder3 tablespoons sugar½ teaspoon salt1 teaspoon vanilla extract2 tablespoons vegetable oilNonstick cooking spray
