Q I seem to waste so much bread – if it’s not super-fresh, the kids won’t touch it. Do you have some ideas of what I can do with stale bread? K. Richards, Ascot Vale, Vic. Here are some great ideas for using stale bread, and we’ve included a recipe for pangrattato, a wonderfully crunchy addition to a simple pasta dish or sprinkled over char-grilled asparagus. It’s a classic from the south of Italy. BREADCRUMBS Freeze the bread remnants until you have enough to warrant getting out the food processor. Thaw the bread, tear it into chunks (with or without crusts – the choice is yours) then process until coarse crumbs form.
