Sweet Potato Cornbread This cornbread bakes to a deep golden color with flecks of sweet potato visible. It looks as good as it tastes. —Judy Roland, Mount Holly, NC Prep: 15 min. Bake: 30 min. Makes: 16 servings 2 cups all-purpose flour2 cups cornmeal½ cup sugar7 tsp. baking powder2 tsp. salt4 large eggs, room temperature, lightly beaten¾ cup whole milk⅓ cup canola oil2⅔ cups mashed cooked sweet potatoes 1. In a large bowl, combine first 5 ingredients. In a small bowl, combine eggs, milk, oil and sweet potatoes. Stir into the dry ingredients just until moistened. Pour into a greased 13x9-in. baking pan. 2. Bake at 425° until a toothpick inserted in center comes out clean, 30-35 minutes. Cut into squares.
