Cheesy Wild Rice Soup We often eat easy-to-make soups when there’s not a lot of time to cook. I replaced the wild rice called for in the original recipe with a boxed rice mix. This creamy concoction is now a family favorite —Lisa Hofer, Hitchcock, SD Takes: 30 min. Makes: 8 servings (2qt.) 1 pkg. (6.2 oz.) fast-cooking long grain and wild rice mix4 cups 2% milk1 can (10¾ oz.) condensed cream of potato soup, undiluted8 oz. Velveeta, cubed½ lb. bacon strips, cooked and crumbledOptional: Minced fresh chives and oyster crackers In a large saucepan, prepare the rice mix according to package directions.
