Pancake & Waffle Mix This terrific blend pairs the ease of a boxed pancake mix with the homemade goodness of light, fluffy pancakes and waffles. Both come out so tender and golden. —Deb Poitz, Fort Morgan, CO Makes: about 6 pancakes or 13 waffles (about 4 in.) per batch 8 cups all-purpose flour2 cups buttermilk blend powder½ cup sugar8 tsp. baking powder4 tsp. baking soda2 tsp. salt ADDITIONAL INGREDIENTS FOR PANCAKES 1 large egg1 cup water2 Tbsp. canola oil ADDITIONAL INGREDIENTS FOR WAFFLES 3 large eggs, separated2 cups water¼ cup canola oil TO PREP AHEAD: In a large bowl, combine the first 6 ingredients with a wire whisk.
