Vegeterian Forests are magical and ethereal places. The shadowy trees, surrounded by a calming silence, feature in many of the world’s best-loved fairy tales and folklore. They’re spiritual symbols of strength, growth and wisdom, and evergreen trees in particular signify immortality, as they stay leafy and green all year round. At Christmas, we invite a piece of this forest magic into our homes as we decorate Christmas trees, but by January most are forgotten and left out for recycling. Our ancestors spent this time of year celebrating evergreen trees, hoping they’d guide us back to the warmth of summer. Perhaps we too can celebrate evergreens in our own way – by cooking with them!
