Since launching Rebel Recipes in 2015, a beautiful blog for vegan foodies, Niki has become a well-known face on the plant-based scene and has now released her first cookbook. We caught up with her to talk all things veg related. When did you go vegan and why? I actually didn’t really decide to go vegan. I have a dairy intolerance and I’ve never been interested in eating meat — even from a really young age it instinctively felt wrong to be eating animals. So my diet has naturally been vegan for a long time. When I was a teenager I started to get really interested in food, but there were hardly any vegan options around so I had to get creative.
