The Australian chef behind acclaimed Singapore restaurant Burnt Ends, Dave Pynt has got plenty of irons in the fire, writes Christian Barker.

One of Asia-Pacific’s most sought-after and hard-to-get reservations, Burnt Ends is the Michelinstarred Singapore restaurant helmed by Australian chef Dave Pynt. It may be a sleek, sophisticated fine dining establishment, but the core appeal of this ‘haute barbecue’ haven harks back to mankind’s most primitive days. “Fire is captivating,” Pynt says of the element that is key to his cooking style. “It’s like caveman TV — it’s mesmerising. Flames and raw, open-fire cooking really capture people’s attention.
