Sweet potato with spiced lamb A simple meal for one that can be easily multiplied to serve more. SERVES 1 PREPARATION TIME 20 minutes COOKING TIME about 1 hour • 1 sweet potato• 1tsp olive oil• 1 shallot, finely chopped• 100g lamb mince• 1 small yellow pepper, finely diced• 1 garlic clove, crushed• 1tbsp ras el hanout spice mix• ½tbsp tomato purée• 227g tin chopped tomatoes• Fresh mint leaves, chopped, optional 1 Preheat oven to 200°C (180°C fan) mark 6. Prick the potato a few times with a fork; cook in the oven for 1hr, until centre is soft when pressed with a knife and skin is crispy 2 Meanwhile, make topping. Heat the oil in a pan over medium-high heat. Add shallot; cook for 5min, until softened. Stir in lamb mince; cook until brown all over.…
