When the sun is shining and an alfresco glass of rosé beckons, whip up one of these light, no-cook dishes and give yourself more time to relax

AN EASY OPTION FOR A HOT SUMMER’S DAY SPELT TABBOULEH This spelt tabbouleh (available from merchant-gourmet.com) has a lovely nutty flavour and chewy texture that marries well with the herby dressing. Serves: 2 Preparation time: 10 minutes • 6 cherry tomatoes, halved• ½ red onion, finely sliced• 250g packet ready-to-eat spelt• ½ tbsp each freshly chopped parsley, mint and coriander• 60ml extra-virgin olive oil• 2tbsp lemon juice• 1 garlic clove• ½ tsp ground coriander• Crumbled feta or roasted sliced chicken, to serve 1 Put the tomatoes and onion into a large bowl and add spelt and herbs. 2 Whisk together the oil, lemon juice, garlic and ground coriander with a fork.
