Delicate, lace-like elderflowers transform hedgerows into a froth of hazy white – they also make a surprisingly versatile addition to many summer dishes

Elderflowers have a delicious muscat scent, but the taste is even better. Gather their heads on a dry sunny morning – their aroma fades by the afternoon – making sure not to pick any next to a busy road or from low-hanging branches. Carefully check the heads for insects, then steep them in water, sugar and lemon slices to release their flavour and aroma. You can add this cordial to sparkling water or Prosecco, or use it to flavour dressings, sweets and puddings – you can even eat the flowers. If you don’t have access to fresh elderflowers, a good-quality ready-made cordial will work just as well.
