Happy days! Here’s how to have a sweet time if you’ve got coeliac disease or gluten intolerance

Raisin choc coconut cookies MAKES 20 PREPARATION 15 MINUTES COOK 15 MINUTES 110g butter 220g brown caster sugar 1 egg 210g gluten-free flour mix ½ tsp baking powder ½ tsp baking soda 130g (¾ cup) raisins 125g (¾ cup) chocolate chips 25g (1 cup) chopped walnuts 25g desiccated coconut 1 Preheat oven to 180°C. 2 Beat the butter with the sugar in a mixer until well combined. Add the egg and mix well. 3 In another bowl, combine all the dry ingredients with the raisins, chocolate chips, walnuts and coconut. Add these dry ingredients to the butter mix and combine well using a large spoon. 4 Make balls from the dough (you can use a small ice-cream scoop) and place the balls on a baking tray lined with baking paper.…
