This velvety, rich-tasting cheese is delicious in both sweet and savoury dishes

Smoked Salmon and Cream Cheese Frittata Serves 6, Prep and Cook: 1 hour 250g block cream cheese, chopped, at room temperature1/3 cup thinly sliced fresh chives3/4 cup shredded parmesan2 tblsps Dijon mustard8 eggs1/2 cup milk1/2 cup finely chopped fresh parsley250g packet sliced smoked salmon, torn into small piecesBaby rocket leaves and lemon wedges, to serve 1 Grease a 20cm x 30cm lamington pan. Line base and sides with baking paper, extending paper 2cm above pan edges. 2 Beat cream cheese, chives, ¼ cup of the parmesan and half the mustard in a small bowl of an electric mixer until smooth.
