SMOTHERED, COVERED, and peppered are but a few of the ways one can order hash-brown potatoes at the Waffle House, the South’s most ubiquitous chain of eateries—often located within sight of each other on opposite sides of the Interstate so roadies needn’t double back. Smothered, covered, and peppered are also terms that aptly describe leg four of our Malibu journey, a northwesterly slice from Atlanta through the heart of the country toward Salt Lake City.
“Morning traffic’s bad in Atlanta,” warns St. Antoine at our handover dinner, “worse than L.A.” He’s not kidding. We crawl out of bed at 7 a.m. right into the morning rush on our way to photograph the Olympic Centennial Park.
By 9 a.m., we’ve had enough and stop in the ’burbs to learn about breakfast potatoes. Traffic…
