SPICED APPLE PANDOWDY

A real winter warmer of a pudding

INGREDIENTS (SERVES 6) • 1½kg cooking apples, peeled, cored and cut into chunky wedges• 150g light brown soft sugar• 3tbsp golden syrup• 1tsp ground cinnamon• ½tsp ground ginger• 1½tbsp plain flour, plus extra for dusting• 375g pack puff pastry, ready rolled• 1tbsp sunflower oil• 1tbsp demerara sugar• 250ml coconut cream, chilled and whipped, to serve (optional) 1 Toss the apple, light brown sugar, golden syrup, cinnamon, ginger and flour together. Tip into an ovenproof pie dish and set aside. 2 Preheat the oven to 180°C/Gas 4. Unroll the pastry onto a lightly floured surface, then cut into 5-10cm squares/rectangles Lay the shapes on top of the apple wedges.
