The long-awaited spring season that follows the busy and often hectic Carnival season is fresh on my mind. Out of the garden flows an abundant array of alliums such as green onions, shallots, and sweet yellow onions, and asparagus spears begin to poke their heads from the rich soil that breathes life into other vegetables like leafy greens, peas, beets, and sweet potatoes. Most of the natural world in Louisiana replaces any brown foliage left behind with new leaves, sprouts, and grasses that are lush with an incoming optimal regenerative climate.
The saying “spring has sprung” also pertains to the sac-a-lait bite, a hand-sized type of panfish. There…
