ANALEMMA WINES PARALLEL BIODYNAMICS I have always had a particular interest in wine, starting from the day an old manager told me to go grab a few bottles of “two-buck chuck” to learn the art of opening a bottle tableside. I wouldn’t say I can remember them being particularly good, but it made me recognize differences in notes and so began the question of why they were good or not. Having worked ten years in hospitality, the longer I have stayed in the industry, the more my relationship with wine and my interest in farming has morphed and evolved.
