I grew up watching fitness influencers on social media meticulously preparing picturesque rice bowls packed with salmon, quinoa, and other socalled superfoods that supposedly take these healthy bowls to the next level. Following these influencers made me believe that superfoods had to be fancy, attractive, and exclusive. Even in a bustling city like Bangkok, buying ingredients recommended by Western influencers was undoubtedly expensive. As a result, I gave up on the idea of making these fabulous bowls myself and instead sought them out in cafés and restaurants. Unsurprisingly, I didn’t stick with the kale, chia seeds, avocados, and acai diet for long. The cost of preaching this eating lifestyle just didn’t match my college student income. However, I kept wondering: why did superfoods have to be expensive?
