Comment devient-on une grande cheffe? Stéphanie Le Quellec: Il s’agit plutôt d’une passion effectivement encouragée par la famille. Nous avions la culture de la table à la maison, pas de cantine, vingt personnes à Noël, ma mère et ma grand-mère cuisinaient très bien. J’étais plutôt dans la gourmandise, le lien social, j’avais un goût pour la cuisine. Je n’ai découvert que plus tard ce qu’est vraiment la gastronomie. Vers 14 ans, j’ai annoncé à mes parents que je ne voulais pas passer un bac général, mais entamer un cursus en école hôtelière. Ils m’ont fait confiance. À ce moment-là, mon ambition était d’en faire mon métier, j’espérais pouvoir ouvrir mon propre restaurant autour de bons petits plats français dans un style bistronomique.
