A little chocolate treat too good to resist!

PREPARATION TIME: 15 minutes COOKING TIME: 20 minutes WHAT YOU NEED FOR CUPCAKES: • 175g self-raising flour • 175g butter • 2 eggs, lightly beaten • 175g caster sugar • 20g cocoa butter WHAT YOU NEED FOR ICING: • 150g butter softened • 250g icing sugar • 2 tablespoons cocoa powder • 2 tsp very hot water WHAT TO DO: 1 Pre-heat oven to 200°C. 2 Beat butter and sugar until light and fluffy. 3 Crack the eggs into a cup and beat lightly with a fork until mixed. 4 Sift in flour and cocoa butter and stir. 5 Pour the mixture evenly into the cupcake patties. 6 Bake for 15-20 minutes or until golden brown. 7 Wait until your cupcakes have completely cooled before decorating.
