Not just serving inspiration on the plate, Bondi’s new Topikós bar/restaurant is stirring up some big Mediterranean-style vibes with its clever two-part interior

Topikos means ‘local’ in Greek, and for Brett Robinson, the owner of Topikós bar/restaurant in Bondi, the community he lives in and loves was the inspiration for his newest project. “We love the name – it reflects how we live here,” he explains. “Most years, we travel to Greece for their summer, so during Covid we really missed that island culture and cuisine.
