My name is Tommy Bradburn. After spending 53 years in the restaurant business and conducting many restaurant seminars, I wrote a book titled How to Open a Re$taurant and Keep it Open. This restaurant series includes How to build sales, profits, (food cost, labor cost, supply cost and the other six accounts. One MP3 file consists entirely with employee motivation and customer service. There is also a section on how the restaurant business can affect the family, pitfalls and victories in the business.
In conclusion; I learned many years ago that the independent restaurant owner/manager does not have the extensive training/knowledge that a franchise operator has.
