EN OTROS TIEMPOS, LAS ESPECIAS ERAN MUY APRECIADAS EN LAS MESAS EUROPEAS, PROCEDÍAN DE LEJANOS PAÍSES DE ORIENTE Y SE PAGABA POR ELLAS SU PESO EN ORO. LAS RUTAS PARA LLEGAR A LOS LUGARES DE PRODUCCIÓN DE LAS ESPECIAS, LAS ISLAS MOLUCAS, A FINALES DEL SIGLO XV Y PRINCIPIOS DEL XVI, FUERON MUY BUSCADAS POR NAVEGANTES PORTUGUESES Y ESPAÑOLES, EN EL CONVENCIMIENTO DE QUE EL PAÍS QUE PUDIERA HACERSE CON LAS TIERRAS EN LAS QUE SE PRODUCÍAN, SERÍA EL DUEÑO DE UN FLORECIENTE COMERCIO. POR ELLO NO ES DE EXTRAÑAR QUE TANTO ESPAÑA COMO PORTUGAL SE LANZARAN A LA MAR A LA BÚSQUEDA DE AQUELLAS RUTAS, COMO HIZO MAGALLANES AL FRENTE DE UNA EXPEDICIÓN ESPAÑOLA EN 1519, HACE 500 AÑOS.

Desde la antigüedad, las especias eran muy apreciadas por sus cualidades, exóticos olores y refinados sabores. Eran sustancias de origen vegetal, que se extraían de algunas partes de diferentes plantas –fruta, flor, corteza, semilla, raíz, etc.– localizadas en zonas tropicales y ecuatoriales del Pacífico. Aquellas especias eran conocidas desde tiempos remotos. Entre los griegos y romanos llegaron a tener gran fama. Y andando el tiempo gozaron de un alto aprecio en las buenas mesas de la Europa del Renacimiento, cuando sus aromas y sabores llegaron a todas los estratos de la sociedad, y sus usos alcanzaron un gran popularidad. Las especias eran utilizadas para muchos fines. Se usaban para condimentar alimentos, a los que proporcionaban una amplia gama de olores y sabores. También se utilizaban para conservar las carnes.
