Fold in ¼ cup diced tomatoes or canned artichokes and a pinch of grated Parmesan cheese. lunch Salad Chop and toss 1 cucumber, ½ red onion, ½ green pepper and 4 cherry tomatoes with 8 olives. Top with 4 oz. chicken and Dijon. dinner Quinoa In a pot of hot water, prepare 1 cup quinoa or buckwheat. Serve with 4 oz. teriyaki chicken or fish and ½ cup steamed broccoli. dessert Sorbet In a processor, blend 3 cups frozen berries, 1 Tbs. honey and 1 tsp. lemon juice.
