Most dishes in Morocco are cooked in a tagine, a thick-bottomed earthenware pot, and are essentially slow-cooked savoury stews typically made with sliced meat or fish together with vegetables and/or fruit. While Marrakesh and Agadir offer plenty of restaurants to choose from, choice in the mountains is limited. Taznakht and Tafraoute offer a good variety of eateries on the race route but in the small mountain villages the Berber omelette is the staple diet (especially for vegetarians). There are plenty of varieties though, and traditionally it is eaten with flatbread. Cutlery is sometimes unavailable so bring your own (a ‘spork’ is ideal).
