This is hypnotic. As I drop a chunk of sugar into my mint tea and stir it, I lean back and quickly become mesmerised by the endless parade of cars, trucks and motorbikes passing on the busy road outside the window. I’m sitting in a small roadside cafe in Ait Melloul, a few miles south of Agadir, one of the big urban centres in Morocco. Suddenly my attention is diverted to a cyclist on an old bike. I follow his progress until he disappears from sight, and smile. The pizza in front of me smells delicious, inviting me to tuck in, but I’m happy to take my time and savour it.
