LE GOÛT DE LA MER Servir trois cents couverts par jour depuis un simple kiosque ouvert sur la grande place de Hyères, c’est le tour de force réussi par le jeune chef Martin Himeur. Ce succès, il le doit à une idée simple: offrir une cuisine exigeante au meilleur prix. Petit-fils de maraîcher, Martin ne transige ni sur la qualité des produits, ni sur la saisonnalité. Après ses années de formation, il a ouvert ce modeste comptoir pour faire connaître sa cuisine, axée sur le poisson et les primeurs. Wraps au merlan, kefta de thon rouge, brocolettis parmesan et pignon, ventrèche de thon grillé, fèves à l’ail et jus d’herbes, mousses aux fruits… C’est tout le terroir varois, terre et mer confondues, qui est sublimé dans l’assiette.
