MOMENTS DE VÉRITÉ Sourire indéfectible, sens de l’accueil, prédisposition à une cuisine du plaisir et du partage, Aziz Mokhtari a fait de son restaurant une escale débarrassée de tout superflu. Á la carte, lentilles du Gers, poitrine fumée et duxelles de cèpes, mais aussi pommes de terre confites, crème citronnée, caviar ou encore joue de bœuf et légumes… Pourles desserts, ganache au chocolat, huile d’olive et assaisonnement Mokhtari, ou sabayon au vin blanc et fruits fiais. Pour la toile de fond, verre, bois, acier sont à l’honneur d’un décor qui s’efface volontiers au profit de l’assiette. Avec le temps, Les P’tits Fayots gagnent en précision avec des plats qui ne concèdent rien aux inspirations du moment, ne diluent pas les saveurs, mais choisissent, au contraire, d’exacerber la quintessence du goût.…
