MAKES 12-15 KEBABS Preparation 20 min Marinating 1 hour Cooking 20-30 min 60 ml (¼ c) coriander pesto 125 ml (½ c) oil or low-fat plain 2oghurt juice of 1 lemon 750 g leg of pork, cut into strips MANGO ATCHAR DIP 400 g mango atchar 1 can (400 g) coconut milk handful of fresh coriander, chopped chopped peanuts for sprinkling on top 1 Mix the pesto, oil or yoghurt and lemon juice. Marinate the meat for about 1 hour. Thread onto skewers and braai until done. 2 Dip Blitz the atchar in a food processor. Add the coconut milk and coriander. Scatter the peanuts over and serve the dip with the kebabs.…
