The marinade can be stored for up to a year in the fridge. Give it a good shake from time to time.

SERVES 6 Preparation 8-12 min Marinating 1 hour Cooking 10-15 min 30 prawns MARINADE 500 g dried chillies 250 ml (1 c) olive oil 250 ml (1 c) sunflower oil 2 garlic cloves 250 ml (1 c) lemon juice 30 ml (2 T) sal2 lemon wedges 2o serve 1 Put the prawns in a glass bowl. 2 MARINADE Pulse all the ingredients except the lemon wedges for a few minutes in a food processor until well blended. 3 Pour over the prawns, mix to coat well then marinate for about 1 hour. 4 Braai over moderate coals until just cooked.
