3 ISABELLA’S YELLOWTAIL WITH SOY AND GARLIC SAUCE

Isabella Niehaus of Langebaan on the West Coast is a dab hand at cooking fish. Here’s one of her outstanding recipes.

SERVES 6 Preparation 5 min Marinating 1 hour Cooking 12-15 min (fish) 5 min (sauce) MARINADE 2 whole garlic bulbs 250 ml (1 c) lemon juice 250 ml (1 c) soy sauce 250 ml (1 c) olive oil FISH 1 yellowtail, cleaned and butterflied 1 Marinade Grate the garlic bulbs on the coarse side of the grater – the skin will stay behind. Mix with the rest of the marinade ingredients. 2 Fish Pour the marinade over the fish and marinate for 1 hour. 3 Transfer the fish to a folding braai grid and braai, skin side down, for 10-12 minutes or until the flesh just turns white.
