Need an excuse to eat chocolate this Easter? One mouthful and you’ll be in heaven thanks to these decadent chocolate treats.

Chocolate madeleines MAKES ABOUT 18 PREP + COOK TIME 45 MINUTES (+ COOLING) 3 eggs 2/3 cup (150g) caster sugar 1 teaspoon vanilla extract 1 teaspoon finely grated orange rind ½ cup (75g) plain flour 1/4 cup (25g) cocoa 50g unsalted butter, melted, plus extra for greasing 75g white chocolate, melted 75g dark chocolate, melted 2 glacé cumquats, sliced thinly, for decorating, optional 1 Preheat oven to 200°C (180°C fan-forced). Grease a 12-hole (1½ tablespoon/ 30ml) madeleine pan with butter. 2 Whisk eggs, sugar, vanilla and orange rind in an electric mixer on high speed until triple in volume (6-7 minutes). 3 Meanwhile, triple-sift the flour and cocoa.
