Vino cotto is made from grape must › meaning “young wine” – which is the name given to freshly pressed grape juice containing the skins and stems of the grapes. It has a unique sweet and sour flavour and can be used in dressings, relishes and deglazing.
Use navel oranges if blood oranges are not available. You can test this cake by inserting a skewer into the middle of the cake, if it comes out clean it is cooked. If the skewer is wet it will require further cooking.
