There can’t be many five-star hotels that have a hawk on the payroll. Nikita is the Rome Cavalieri’s resident bird of prey, employed to keep her beady eyes on the hotel’s elegant terraces, pools and gardens. Her presence alone wards off scavenging pigeons and there’s not a leaf out of place in the hotel’s 15 acres of Mediterranean parkland.
