Q: I’ve had a lot of tandoori chicken in my life but nothing as delicious as the meal I had at Calcutta Cricket Club. It brought together the crispy succulence of fried chicken and the spice profile of tandoori. Can you get the recipe for me? — HAZEL, Airdrie, Alta. A: Rene has a couple of tricks that make this chicken so tasty. To start, he double marinates the chicken, first with a dry rub of mainly Kashmiri chilis for that deep red colour, then with a well-seasoned yogurt marinade. Once marinated, the chicken is dredged in a chickpea flour coating for a crispy crunch.
