BEETROOT SALAD
INGREDIENTS
• Beetroot• 1 cup vinegar• 3 tablespoons sugar• Pinch of salt• Garlic cloves, chopped (to taste)• Red onion, chopped (to taste)• Parsley (or other greens), chopped
METHOD
Cook whole beetroot in water. When soft, drain (keep the water) and cut in cubes or slices. You can also grate them. Mix a cup of the beetroot water, a cup of vinegar, 3 tablespoons of sugar and a pinch of salt, and add to the beetroot. Then add chopped red onion, garlic, and greens, and mix.
