CAROLINA SOUDAH

MÅNDAG Blomkålssoppa med äggmuffins 45 minuter ½ gul lök, hackad½ msk smör1 stor skalad potatis, 150 g3 dl vatten1 grönsaksbuljongtärning300 g blomkål i buketter3 dl mjölk, 3%salt och svartpeppar1 msk finskuren gräslök Äggmuffins 2 kraftiga muffinsformar2 ägg20 g god korv eller skinka3 små tomater2 msk riven ost Gör så här 1. Fräs lök i smör tills den mjuknat. Fräs med tärnad potatis. Tillsätt vatten, buljongtärning och blomkål. Sjud under lock ca 15 minuter. Tillsätt mjölk och mixa slätt. Salta och peppra. Strö över gräslök. 2. Ställ muffinsformarna på en plåt. Knäck ett ägg i varje form. Lägg i tärnad korv el skinka. Lägg på tomathalvor och ost. Salta och peppra. Grädda i 200° i ugnen i 10–15 minuter.
