MINI MINCE PIES

There’s nothing like a warm mince pie to put you in a festive mood. Try our tasty recipe for perfect mini versions.

HANDS-ON TIME 30MIN, PLUS CHILLING AND COOLING. COOKING TIME ABOUT 20MIN. MAKES 24 ✶✶ 175g (6oz) plain flour, plus extra to dust ✶✶75g (3oz) icing sugar, plus extra to dust ✶✶ 100g (3½oz) unsalted butter, chilled and cubed ✶✶ 1 medium egg, separated ✶✶ 1tsp vanilla extract ✶✶1/2 eating apple ✶✶50g (2oz) soft dark brown sugar ✶✶25g (1oz) vegetarian suet ✶✶ 100g (31/2oz) mixed dried fruit ✶✶50g (2oz) chopped glacé cherries ✶✶1/2tsp ground mixed spice ✶✶Finely grated zest of 1/2 large orange ✶✶2tbsp ruby port 1 To make the pastry, put the flour, icing sugar and butter into a food processor and pulse until the mixture resembles fine breadcrumbs.
