HANDS-ON TIME 25MIN, PLUS OVERNIGHT FIRMING. MAKES ABOUT 60 SMALL SHAPES ✶✶ 1 large egg white ✶✶A few drops of peppermint extract ✶✶ 350g (12oz) icing sugar, plus extra to dust ✶✶75g (3oz) dark chocolate, melted (optional) 1 In a large bowl, whisk together the egg white and peppermint extract until frothy but not stiff. Sift in the icing sugar and stir to make a stiff mixture. 2 Tip the mixture on to a piece of baking parchment lightly dusted with icing sugar; knead until smooth. Dust with more icing sugar and roll out the mixture until it’s 5mm (1/4in) thick. 3 Use any cutters you like to stamp out small shapes, then arrange them on baking sheets lined with baking parchment.
