CHOCOLATE & FIG SALAMI

A speciality of southern Italy, this intensely flavoured sweet ‘salami’ is best enjoyed with a cup or two of espresso.

PREPARATION 35MIN, PLUS 1 MONTH MATURING. COOKING TIME ABOUT 10MIN. MAKES ABOUT 25-30 SLICES ✶✶ 100g (3½oz) hazelnuts ✶✶225g (8oz) dried apricots, chopped ✶✶225g (8oz) dried figs, chopped ✶✶2tbsp cocoa powder ✶✶75g (3oz) candied peel ✶✶ 100g (3½oz) plain chocolate chips ✶✶Rice paper 1 Preheat the oven to 170°C (150°C fan oven) mark 3. Spread out the hazelnuts on a baking sheet in 1 layer. Cook for 5-8min until golden, turning once. Tip on to a plate to cool. 2 Whiz the apricots and figs in a food processor to make a paste. Whiz in the cocoa powder and transfer the mixture to a bowl. 3 Finely chop the nuts in a food processor.
