Gizzi Erskine PARMESAN SNOWFLAKES WITH GOAT’S CHEESE MOUSSE & PICKLED BEETROOT

Cooking Parmesan in rounds makes the most beautiful, lacy snowflake-like bases. A really light goat’s cheese mousse and some home-pickled beetroot sit on top in a delicious mish-mash of flavours, colours and textures.

MAKES 24. PREPARATION TIME 25 MINUTES. COOKING TIME ABOUT 20 MINUTES FOR THE PICKLED BEETROOT ✶✶250ml (9 floz) white wine or cider vinegar ✶✶ 100g (331/2oz) golden caster sugar ✶✶ 30g (1oz) sea salt flakes ✶✶ 1 thyme sprig ✶✶A pinch of chilli flakes ✶✶ 3 purple beetroots (or 1 purple, 1 golden and 1 candy), peeled and cut into small (about 8mm/⅜in), dice FOR THE GOATS’ CHEESE MOUSSE ✶✶220g (8oz) chevre (firm goats’ cheese) ✶✶ 100ml (331/2floz) double cream ✶✶ 1 tsp truffle oil (optional but TOTALLY recommended) ✶✶1/2tsp really finely ground black pepper FOR THE PARMESAN CRISPS ✶✶A few thyme sprigs, leaves picked and chopped ✶✶ 120g (4oz) Parmesan cheese, freshly grated TO GARNISH ✶✶Chopped chervil and/or dill 1.
