WHITE NUT ROAST

You don’t have to be a vegetarian to enjoy this! It also makes a wonderful stuffing for a vegetarian or turkey roast.

HANDS-ON TIME 25MIN, PLUS COOLING. COOKING TIME ABOUT 11/4HR. SERVES 8 ✶✶2tbsp olive oil, plus extra to grease ✶✶200g (7oz) pine nuts ✶✶ 100g (31/2oz) blanched hazelnuts ✶✶2 onions, finely chopped ✶✶2 leeks, finely chopped ✶✶ 3 garlic cloves, crushed ✶✶250g (9oz) fresh white breadcrumbs ✶✶Finely grated zest and juice of 1 orange ✶✶ 3tbsp freshly chopped sage leaves ✶✶ 3tbsp picked thyme leaves, plus extra sprigs to garnish, optional ✶✶2 medium eggs, lightly beaten 1 Preheat the oven to 200°C (180°C fan) mark 6.
