CHRISTMAS PIE

A rich, colourful pie flavoured with Stilton, sweet potatoes and cranberries.

HANDS-ON TIME 30MIN. COOKING TIME ABOUT 11/4HR. SERVES 8 ✶✶4 medium sweet potatoes, peeled and cut into 2.5cm (1in) pieces ✶✶2tbsp olive oil ✶✶5 rosemary sprigs ✶✶ 1 onion, finely chopped ✶✶Small bunch of fresh thyme, leaves picked ✶✶50g (2oz) walnuts, roughly chopped ✶✶ 150g (5oz) vegetarian Stilton, roughly crumbled ✶✶50g (2oz) cranberries, fresh or frozen ✶✶Flour, to dust ✶✶500g block shortcrust pastry ✶✶ 1 medium egg, beaten 1 Preheat the oven to 200°C (180°C fan) mark 6. Put the sweet potatoes in a roasting tin and drizzle over 1tbsp oil. Add the rosemary sprigs and some seasoning. Roast for 20min or until just tender.
