If you’re nervous about making custard, then try this silky cream instead.
HANDS-ON TIME 5MIN. COOKING TIME 5MIN. SERVES 6
✶✶ 3tbsp cornflour
✶✶400ml (14fl oz) whole milk
✶✶40g (1½oz) caster sugar
✶✶ 1tsp vanilla extract
✶✶2tbsp amaretto liqueur
✶✶ 100ml (3½fl oz) double cream
1 Put the cornflour into a small bowl with 3tbsp milk and mix well. Pour the remaining milk into a pan and add the sugar and the cornflour mixture. Bring to the boil, whisking constantly, and heat until the sauce thickens.
2 Take off the heat and stir in the vanilla extract, amaretto liqueur and cream. Serve immediately or leave to cool to room temperature – put a circle of greaseproof paper on to the surface of the sauce to stop a skin forming.
