PROPER TURKEY GRAVY

Flavoured with all the deliciousness of your roasted turkey.
HANDS-ON TIME 5MIN. COOKING TIME 25MIN. SERVES 8 ✶✶The juices in the tin reserved after roasting the turkey ✶✶ 1tbsp plain flour ✶✶200ml (7fl oz) light, fruity red wine ✶✶About 1.1 litre (2 pint) hot chicken or turkey stock (see recipe, below) ✶✶¼ lemon 1 Spoon off all but 2tbsp fat from the turkey roasting tin, leaving behind all the dark juices. Put the roasting tin on the hob over a low heat. 2 Sprinkle the flour into the roasting tin and stir into the juices. Cook for 2-3min, stirring constantly, to make a paste. 3 Gradually pour in the red wine, stirring all the time, then slowly add the hot stock.
