Using brioche crumbs adds a decadent richness to this sauce. HANDS-ON TIME 10MIN, PLUS INFUSING. COOKING TIME ABOUT 10MIN. SERVES 8 ✶✶600ml (1 pint) whole milk ✶✶6 whole cloves ✶✶2 bay leaves ✶✶225g (8oz) brioche loaf or buns ✶✶½tsp ground nutmeg, plus extra to garnish 1 Heat the milk, cloves and bay leaves in a medium pan until the liquid is scalding hot (there should be small bubbles around the side of the pan). Take the pan off the heat and set aside to infuse for 15min. 2 Meanwhile, whiz the brioche to crumbs in a food processor. 3 Lift the bay leaves and cloves out of the milk pan and discard. Return the pan to a gentle heat and stir in the crumbs, nutmeg and plenty of seasoning. Bring up to the boil and simmer for 1-2min until…
