HANDS-ON TIME 15MIN. COOKING TIME ABOUT 10MIN. SERVES 8
✶✶800g (1lb 12oz) carrots, cut into batons, or 600g (1lb 5oz) ready-prepared carrot batons
✶✶40g (1½oz) butter, softened
✶✶2tbsp maple syrup
✶✶40g (1½oz) pecans, roughly chopped
✶✶Small handful of fresh parsley, chopped
1 Bring a large pan of water to the boil. Add the carrots and boil for 5min or until just tender.
2 Meanwhile, in a small bowl, mix together the butter, maple syrup, pecans, parsley and lots of seasoning.
3 Drain the carrots and leave to steam dry in the colander for a few minutes. When dry, tip them into a warmed serving dish, dot over the maple butter and serve.
